Lighter than banana bread and less sugary than an ordinary cake. Eat a slice warm, then freeze the rest in single slices for lunchboxes.

Ingredients

ripe bananas3 ea
eggs2 ea
self-raising flour — 1 ¼ cup190 g
chocolate protein powder — 1 scoop30 g
cacao powder — 2 tbsp16 g
baking powder — ½ tsp2.3 g
salt — ½ tsp3 g
milk — 2 tbsp; only if the batter is dry40 ml
dark chocolate chips — to sprinkle60 g

Method

Heat the oven to 170°C and line a square baking tin.
Mash the bananas in a large bowl.
Push the banana to one side and whisk the eggs very well — this is what makes the cake light and fluffy.
Add the self-raising flour, protein powder, cacao, baking powder and salt.
Gently fold everything together without overmixing (overmixing turns a fluffy cake into a dense slice). Add a splash of milk if it looks too dry — riper, bigger bananas need less.
Spread into the tin and sprinkle with dark chocolate chips.
Bake for 30 minutes.
Have a slice while it's warm, then cool fully, slice and freeze in individual slices for lunchboxes.
