The viral one-dish salmon pasta: salmon, feta, garlic, tomatoes and spinach baked together, then tossed through ribbons of pasta. Easy clean-up.

Ingredients

salmon fillets — skin removed, cut into pieces500 g
feta — block200 g
garlic bulb1 ea
cherry tomatoes — 1 punnet250 g
baby spinach — 3 cup90 g
basil pesto — 2 tbsp40 g
lemon — juiced0.5 ea
sweet paprika — 1 tsp2.5 g
onion powder — 1 tsp3 g
garlic powder — 1 tsp3 g
pappardelle — or your favourite pasta375 g
olive oil — 1 tbsp20 ml
parmesan — to serve30 g

Method

Heat the oven to 180°C.
To a baking dish add the salmon, the block of feta, the garlic bulb, the cherry tomatoes, the baby spinach and the pesto.
Bake for 30 minutes.
Meanwhile, cook your favourite pasta.
Add the juice of half a lemon and a teaspoon each of sweet paprika, onion powder and garlic powder, season with salt and pepper, then squeeze out the garlic and mash everything together.
Add the pasta, a splash of pasta water and a squirt of olive oil, and toss.
Top with parmesan and enjoy.

Easy Baked Chickpea Feta Pasta
- 440 g Tinned chickpeas instead of salmon fillets
The chickpeas go in the dish at the start and bake the full 30 minutes with the feta; mash some of them in with the garlic.
Gluten-free
- 375 g Gluten-free fettuccine instead of pappardelle
Cook the gluten-free pasta a minute short of the packet time and toss it straight away, as it softens quickly in the sauce.
