Creamy baked mac and cheese bulked out with cauliflower, in a simple cheddar sauce and topped with parmesan.

Ingredients

macaroni250 g
cauliflower — cut into small florets1 ea
parmesan — grated50 g
whole milk500 ml
plain flour35 g
butter50 g
cheddar cheese — grated80 g
Dijon mustard15 ml

Method

Preheat the oven to 190°C (170°C fan) / Gas 5.
Put the macaroni into a pan of boiling water, bring back to the boil and simmer for 10 minutes. After 5 minutes, add the cauliflower to the pasta pan.
Meanwhile, make the cheese sauce: put the milk, flour and butter in a saucepan over a medium heat and whisk until the butter has melted and the flour has mixed in.
Once the sauce starts to thicken (2-3 minutes), take it off the heat and stir in the cheddar and Dijon mustard until the cheese has melted.
Drain the pasta and cauliflower and put them in a baking dish. Pour over the cheese sauce and mix well to coat.
Sprinkle the parmesan on top and bake for 20 minutes, until the top is browning and bubbling.

- 250 g Gluten-free macaroni instead of macaroni
- 20 g Cornflour instead of plain flour
Cook the gluten-free macaroni to its packet time, adding the cauliflower for the last 5 minutes; whisk the cornflour into the cold milk first, then heat with the butter until thick.
