Oats, dates, cacao and coconut blitzed into a no-bake snack that keeps all week in the fridge.

Ingredients

rolled oats — 1 cup90 g
cacao powder — 2 tbsp16 g
fresh Medjool dates — pitted12 ea
desiccated coconut — ¾ cup70 g
maple syrup — 2 tbsp40 ml
desiccated coconut — 2 tbsp; extra, for coating14 g

Method

Add the rolled oats, cacao powder, dates, coconut and maple syrup to a food processor.
Blitz until the mixture forms a sticky dough that holds together when pressed between your fingers.
Roll into bite-sized balls.
Coat each ball in the extra desiccated coconut.
Store in an airtight container in the fridge for up to one week.
